Summer Corn Salad

Ingredients:
6 ears of fresh Corn
1/2 Red Onion, finely chopped
1 small container of Grape Tomatoes
(cut Tomatoes in halves)
1/2 Cup Finely chopped Fresh Basil – 2 small packages
1/4 Cup Olive Oil
2 Tablespoons of White Balsamic Vinegar
1 tsp. Sea Salt to taste
Method:
Shuck and clean ears of corn; prepare steamer. After
water boils in steamer pot, add corn and steam for 11
minutes. Cool corn in ice water bath. Cut kernels of corn
from cobs. Add all remaining ingredients and combine in
large bowl.
Can be enjoyed immediately or chilled overnight to meld
flavors.
Recipe can be doubled!
